# Google Ads for Bakeries: Campaigns, Tracking, Seasonal Timing

[Oğuz Erol](https://oguzerol.com/en/about-me/) | 13 min read

I build a bakery’s Google Ads around two different customers: the daily walk-in buying bread, rolls or a slice of cake within walking distance, and the customer planning a celebration cake days ahead. Put both in one campaign and the budget drifts toward the cheap, plentiful daily clicks while the valuable cake order disappears from your reporting. If you have a single shop, advertise cake orders first; for daily customers a complete Business Profile is usually enough. The sum is right below.

## Two customers, two campaigns

I put a bakery’s daily customer and its custom cake customer in separate campaigns because they search for different things and order through different channels.

| | Daily customer | Planned order |
| --- | --- | --- |
| Buys | Bread, rolls, pastries, cake by the slice | Birthday, engagement, custom cakes |
| Decision time | Right now, on the way | Days ahead |
| Distance | Walking, short drive | District or whole city |
| Campaign | Performance Max with store goals | Search |
| Targeting | Your business location | The districts your orders come from |
| Track | Directions, call clicks | Order form, WhatsApp clicks |
| Ad schedule | Opening hours only | Evenings too, if the form and WhatsApp take orders |

## Which campaign pays for itself at a single shop

The most a bakery can pay per click follows from what the customer brings in: the order cost you accept, multiplied by the click-to-order rate. On that sum a cake order pays for itself with one order; a daily basket only does if the person the ad brought in becomes a regular.

| Step | Cake order | Daily basket, one visit | Daily basket, regular-customer assumption |
| --- | --- | --- | --- |
| What the customer brings in | 100 | 5 | 5 × 10 visits a month = 50 |
| Share you spend on ads | 10% → 10 | 10% → 0.50 | 10% → 5 |
| Click-to-order rate | 5% (1 in 20 clicks) | 5% | 5% |
| Highest affordable click | 0.50 | 0.025 | 0.25 |

*Worked example: figures in any currency, illustrative only, not market data.* The last column is an assumption: it takes for granted that someone the ad brought in comes back 10 times a month. Google Ads can’t show you that, and a single shop will most likely never get store visit data (see below). Before you tie budget to the regular-customer sum, test it against your own till: how many customers are new faces, how many come every day.

So if you have one shop, open a Search campaign for cakes first and complete your Business Profile for daily customers. I don’t give a real cost per click here, because I have no verified current data for bakery keywords; check Keyword Planner in Google Ads for your own area. Then redo the sum every month with real numbers: spend divided by orders is your cost per order.

## Which campaigns to try

A bakery has three tools: a Search campaign for cake orders, free Business Profile posts, and [Performance Max](https://oguzerol.com/en/what-is-performance-max/) with store goals for daily customers (conditional at a single shop).

1. **Search, for cake orders.** The ad appears in Google Search, matched to what people type. Planned customers type what they want: “birthday cake order”, “custom cake”, “engagement cake”. The ad goes to your order page or WhatsApp.
2. **Performance Max with store goals, for daily customers.** Performance Max is the campaign type in which Google itself distributes your ad across Search, Maps, YouTube and other placements. With store goals, the aim is directions or call clicks, and your store location comes from a linked [Business Profile](https://oguzerol.com/en/google-business-profile-management/). When location assets are used in this campaign, Google does not recommend adding radius targeting on top.
3. **Business Profile posts, free.** “Offer” and “Event” posts take a date range and can be scheduled ahead, so you can publish the last order day for a holiday weeks in advance. Posts without a date range are archived after 6 months, and an unverifiable phone number gets a post rejected (Google Business Profile Help, as of 13 October 2026).

Older guides that tell you to open a “Local campaign” are out of date: Google upgraded Local campaigns to Performance Max in 2022–2023, and new ones can no longer be created ([Google Ads Help](https://support.google.com/google-ads/answer/12494107)).

I don’t set up remarketing (showing ads again to people who visited your site) at the start; for a single shop that doesn’t sell online, that audience stays small.

### Should a single-location bakery run Performance Max with store goals?

Try Performance Max with store goals only if all four conditions hold: the profile is verified and has photos, tracking is in place, you can set aside a separate small budget, and you can wait at least 30 days for results.

The reason is Google’s own guidance. Store visit measurement is available in 37 countries, but Google recommends at least 10 business locations for store visit goals and at least 5 for local actions such as directions and calls, and it does not publish the click threshold for store visits ([Google Ads Help](https://support.google.com/google-ads/answer/13775728), as of 13 October 2026). These are recommendations, not requirements, but one shop gives the campaign little to learn from, and you will most likely never see store visit data. The same page recommends at least 30 days and allows shorter campaigns for seasonal events such as Mother’s Day. With a single shop I still handle short holiday spikes in Search, because there I choose the keywords and the budget directly.

## Which searches to target and which to exclude

In the cake campaign, narrow every keyword by order intent, product and place; “cake” or “birthday cake” on its own also brings in people looking for recipes and pictures.

Check Google Trends for your own country before you plan the cake budget. In the one market I measured, Turkey (October 2021 to September 2026), birthday cake searches were almost flat all year while the phrase “cake order” fell every year; if your data looks the same, keep the cake budget steady all year and don’t lean on a single order phrase.

| Group | Example search | Where |
| --- | --- | --- |
| Order intent | birthday cake order, cake delivery \[district\] | Search |
| Product | custom cake, gluten-free cake, engagement cake | Search |
| Occasion | Mother’s Day cake, New Year’s cake | Search, seasonal ad group |
| Location | bakery \[neighbourhood\] | Performance Max and Search |

**Starter negative list** (your ad won’t show for searches containing these): recipe, how to make, ingredients, tin, pan, course, class, jobs, hiring, machine, images, drawing, colouring, song. Add “wholesale” only if you don’t sell wholesale to cafés and restaurants. In the first weeks I read the search terms report every week and grow the list.

**Target area:** draw the Search campaign’s area from your order book. Count the districts your cake orders came from in recent months, launch with those, then check the location report in Google Ads to see where clicks come from and narrow or widen the area.

## Ad copy and assets

A cake ad headline should name the product or occasion, the place and the action. Example headlines: “Birthday Cake Orders”, “Custom Cakes in Camden”, “Order on WhatsApp”.

- **Put the last order date in the ad.** A countdown customizer counts the time left for you. Example: `{COUNTDOWN(2027-03-06 18:00:00,10)}` counts down to a last order time before Mothering Sunday 2027 in the UK (7 March) and starts showing the ad 10 days before that date (example date).
- **Sitelinks** should go to your cake catalogue, order form and holiday page, not your homepage.
- **The call asset** (the phone number under your ad) should be scheduled for opening hours only.

If you run Performance Max, prepare photos of your window display, product close-ups and shopfront; the shopfront helps people recognise you on Maps. Upload your own video in horizontal, square and vertical formats, each at least 10 seconds; if one is missing, Google may auto-generate that format (Google Ads Help, as of 13 October 2026).

## What to track: conversion value order

Not every bakery conversion is worth the same, and smart bidding looks for more people like whoever completes the conversion you mark as primary (the action bidding aims for).

The most common mistake I see is giving smart bidding a goal that is not a real conversion. At a bakery the most likely version is making directions the primary conversion. By Google’s definition, someone who clicks your ad and later taps “Directions” on your Business Profile counts as one conversion, with a 30-day default window ([Google Ads Help](https://support.google.com/google-ads/answer/9013908), as of 13 October 2026). Not everyone who taps comes in, and people already walking past tap too. If that number drives bidding, the campaign grows the easy tap, not the order.

| Rank | Conversion | Role | Why |
| --- | --- | --- | --- |
| 1 | Cake order form | Primary, highest value | Has date, product, phone; closest to a sale |
| 2 | WhatsApp order click | Primary, lower value than the form | Strong intent, but a click is not a message |
| 3 | Call click | Primary, low value | A tap on a button, not a completed call |
| 4 | Directions | Goal of the daily campaign only | Inflates easily; you don’t know who arrived |
| – | Page or menu view | Not a conversion | In bidding, it grows browsing |

Set values from your own books, not guesses: average cake order value times the share of that channel’s leads that become orders.

I don’t switch to smart bidding (a strategy in which Google sets bids from your conversion data) before tracking is in place; in the first month I run “Maximize conversions” with phrase and exact match. I only test broad match once the negative list has settled.

### How I count WhatsApp orders

1. Make the website’s WhatsApp button a wa.me link and send the click to Google Ads as a conversion through Tag Manager. Setup details are in [WhatsApp conversion tracking](https://oguzerol.com/en/whatsapp-conversion-tracking/).
2. On the page your ads point to, add a prefilled message: “Hi, I’d like to order a cake (A)”. Count conversations that start with that line, and use a different line on the rest of the site.
3. Once a week, put three numbers side by side: clicks counted by Google Ads, messages with that line, and messages that became orders.
4. If many people click and never write, lower the value of the WhatsApp click.

### Delivery app orders disappear from tracking

A customer who clicks your ad and then orders through a delivery app (Uber Eats, Deliveroo, or in Turkey Yemeksepeti or Getir) will most likely not show up as a conversion in Google Ads, because your conversion tag runs on your own site and the app’s order page isn’t your site, so the ads look weaker than they are. Send ad traffic to your own channels, log app orders weekly in a separate sheet and roughly compare weeks with ads on and off. That is a signal, not a measurement.

## Seasonal demand: when to switch on

In the Turkish data I measured, occasion searches rose only in their own week and stayed below everyday birthday cake searches: New Year’s cake reached at best about half of birthday cake searches that week, Valentine’s and Mother’s Day cake around a seventh (Google Trends, Turkey, October 2021 to September 2026). Check whether your country follows the same pattern. If it does, the campaign that runs all year is birthday cakes; occasions are a short add-on.

My planning rule: I build and switch on the occasion ad group 2–3 weeks before the peak week, and concentrate budget in the week searches actually rise. That leaves time for ad approval and for adding negatives from the first search terms. It is my rule, not Google’s.

| Occasion | Date | Build and switch on |
| --- | --- | --- |
| New Year, Christmas | 31 December, 25 December | 2–3 weeks before the peak week you find in Trends |
| Valentine’s Day | 14 February | Late January |
| Mother’s Day | Varies by country (UK: March or early April; US and Turkey: second Sunday of May) | 2–3 weeks before your country’s date |
| Easter, Halloween | Varies by year / 31 October | 2–3 weeks before the peak week you find in Trends |
| Wedding season | Varies by country | All year, as a product ad group |

## Ad schedule and capacity

Set the ad schedule around the hours your bakery can actually take an order. Another mistake I see often is running ads when nobody answers the phone. The daily campaign should run only while the shop is open. The cake campaign can stay on in the evening, since the form and WhatsApp take orders after closing, but schedule the call asset for opening hours only.

When a holiday fills your capacity, cut the budget and pause that ad group after the last order day. Paying for clicks on orders you cannot fulfil is budget spent for nothing.

**How we start.** First we go through your product range, your order channels (WhatsApp, phone, form, delivery apps) and your holiday capacity; then I set up tracking and launch the campaigns. Reach out via the [contact page](https://oguzerol.com/en/contact/).

## Frequently Asked Questions

### Does a bakery need Instagram as well as Google Ads?

They do different jobs. Instagram creates desire by showing the cake; Google appears for people already searching for one. Cake photos work well on Instagram, but because order intent starts in search, one does not replace the other.

### Which conversions should a bakery track in Google Ads?

The cake order form and WhatsApp clicks are primary, call clicks are primary with a lower value, and directions are the goal of the daily campaign only. The “Calls” figure in your Business Profile counts taps on the call button, not conversations. If you take orders by phone, [call-focused ads](https://oguzerol.com/en/call-focused-ads/) are worth a look.

### Does a Google Business Profile matter for a bakery?

Yes; Performance Max with store goals takes your location from the linked profile. Before you start advertising, note a month of calls, directions, website clicks and messages from the profile’s performance view. That is the no-ads baseline you read the ads against.

### My bakery has no website and orders come in on WhatsApp. What can I measure?

The most reliable route is a single order page: the ad lands there and a tap on the WhatsApp button counts as a conversion. Google Ads also has [message assets](https://support.google.com/google-ads/answer/14888522) that send an ad click straight to WhatsApp, but they are in beta and may not be available in your account (Google Ads Help, 13 October 2026). Without a page, what you can measure is directions and call clicks coming through your Business Profile.

### Should a bakery advertise wholesale too?

If you sell bread or pastries wholesale to cafés and restaurants, put that demand in its own Search campaign instead of the negative list. A business searching for “wholesale bread” has different needs and order sizes from a cake customer, and needs its own budget and its own quote form.

WHAT YOU CAN ASK FOR

## How do I work?
Work-hour packages

Tell me about your business and what you need on WhatsApp or by phone; we agree on **a work block of somewhere between 5 and 40 hours** and I start doing what is needed. What you get is not a calendar window — it is net working hours spent directly on your business. I can use 40 hours working three days straight, or deliberately spread it out and finish it over a year — whatever the work calls for. I do not spend my time estimating how long something will take, I spend it doing the work; every hour I spend leaves a lasting result in your business. We keep going for as long as you find it useful.

WORK BLOCKS

## Why not monthly?
Is 40 hours a week?

On a fixed monthly fee both sides are watching the wrong thing: you watch a fixed cost, the other side watches how many more contracts like this they can line up. Working by the hour puts us both in front of the same thing — the real value of the work that got done. I know not having an upfront answer to "how much will this cost in total?" is the natural cost of this model. But instead of paying a fixed fee for months to a setup that is not producing results, you only pay for the qualified time spent on your work — and you see exactly where that time went, start to finish. That is why my clients keep coming back.
